 Longanisa Fried Rice will be a good addition for your Longanisa recipes. It is for keep I promise, it surely is easy to do and prepare. I used leftover longanisa and rice from yesterday. For fried rice recipes, using day old rice is better because it is less sticky. Longanisa is a popular Filipino food, our version of sausage or chorizo. It’s Spanish in origin that is longaniza. The Philippines was under the Spanish colonial rule for three hundred years which explain why some of our food or delicacies have Spanish influence. Longanisa varies in taste depending on what town from the Philippines it was made but basically fall into  two categories, the hamonado which is the sweet version and the derecado which is more garlicky in taste. In this recipe, I used the sweet pork longanisa, this is available in Asian or Filipino supermarket. I actually found a fresh one meaning not frozen at all on the meat section of Lotte recently. As I have said earlier, preparation and cooking is easy.  In a pan, sauté the garlic till it is golden brown and fragrant.
